Creamy Chicken Bacon Spinach Penne
Ingredients:
8 oz penne pasta
1 lb boneless, skinless chicken breasts, cubed
4 slices bacon, chopped
3 cups baby spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup chicken broth
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Directions:
- Cook the penne pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the cubed chicken, season with salt and pepper, and cook until the chicken is browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the skillet.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for 5 minutes until the sauce begins to thicken.
- Add the cooked penne pasta, chicken, crispy bacon, and baby spinach to the skillet. Toss to combine and heat through until the spinach is wilted.
- Stir in the grated Parmesan cheese and mix well. Adjust seasoning with salt and pepper if needed.
- Serve the creamy chicken bacon spinach penne hot, garnished with additional Parmesan cheese if desired.
