Low-Carb Chicken and Broccoli Cheesy Casserole

Ingredients:

  • 4 cups broccoli florets
  • 2 cups cooked chicken, shredded
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 4 oz cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot of boiling water, cook the broccoli florets for 2-3 minutes until tender-crisp. Drain and set aside.
  3. In a large mixing bowl, combine the cooked chicken, cheddar cheese, and mozzarella cheese.
  4. In a medium saucepan, heat the heavy cream and chicken broth over medium heat until hot but not boiling. Add the cream cheese, garlic powder, onion powder, salt, and pepper. Stir until smooth and well combined.
  5. Pour the sauce over the chicken and cheese mixture, and stir to combine.
  6. Add the broccoli florets to the mixture and gently stir to combine.
  7. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the grated Parmesan cheese on top.
  8. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
  9. Let the casserole cool for 5 minutes before serving.
