Savory Garlic Butter Steak Bites with Cheesy Smashed Potatoes

Ingredients:

For the Steak Bites:

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional)

For the Cheesy Smashed Potatoes:

  • 1.5 lbs baby potatoes
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Directions:

  1. Preheat your oven to 400°F (200°C).

For the Cheesy Smashed Potatoes: 2. Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain and let cool slightly. 3. Place the cooked potatoes on a baking sheet lined with parchment paper. Use the bottom of a glass or a potato masher to gently smash each potato. 4. Drizzle the smashed potatoes with olive oil, then sprinkle with minced garlic, salt, and pepper. Top with shredded cheddar and mozzarella cheese. 5. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly. Garnish with chopped parsley if desired.

For the Steak Bites: 6. While the potatoes are baking, heat a large skillet over medium-high heat. Add olive oil and 2 tablespoons of butter. 7. Once the butter has melted, add the steak bites to the skillet. Season with salt and pepper. Cook for 2-3 minutes on each side, or until the steak is browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside. 8. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Cook for about 1 minute until fragrant. 9. Return the steak bites to the skillet and toss to coat in the garlic butter sauce. Garnish with chopped parsley if desired.
