Moist and Flavorful Healthy Carrot Cake
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup unsweetened applesauce
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 2 eggs
- 1 tsp vanilla extract
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together whole wheat flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together applesauce, maple syrup, coconut oil, eggs, and vanilla extract until well combined.
- Stir in grated carrots, crushed pineapple, walnuts (if using), and raisins (if using) into the wet ingredients.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely.
