Moist and Flavorful Healthy Carrot Cake

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together whole wheat flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together applesauce, maple syrup, coconut oil, eggs, and vanilla extract until well combined.
  4. Stir in grated carrots, crushed pineapple, walnuts (if using), and raisins (if using) into the wet ingredients.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely.
