Savory Alice Springs Chicken Delight
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup sliced mushrooms
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded Cheddar cheese
- 8 slices bacon, cooked and crumbled
- 1/2 cup honey mustard sauce
- 2 tablespoons chopped fresh parsley (optional)
Directions:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side, or until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook for about 4-5 minutes, or until tender. Remove from heat.
- Place the cooked chicken breasts in the prepared baking dish. Top each chicken breast with mushrooms, then sprinkle with Monterey Jack cheese, Cheddar cheese, and crumbled bacon.
- Drizzle the honey mustard sauce over the top of each chicken breast.
- Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh parsley, if desired, before serving.
