Savory Alice Springs Chicken Delight

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded Cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup honey mustard sauce
  • 2 tablespoons chopped fresh parsley (optional)

Directions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side, or until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook for about 4-5 minutes, or until tender. Remove from heat.
  4. Place the cooked chicken breasts in the prepared baking dish. Top each chicken breast with mushrooms, then sprinkle with Monterey Jack cheese, Cheddar cheese, and crumbled bacon.
  5. Drizzle the honey mustard sauce over the top of each chicken breast.
  6. Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped fresh parsley, if desired, before serving.
