Comforting Creamy Tortellini Soup
Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound Italian sausage, casings removed
- 6 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (8-ounce) can tomato sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 1 (9-ounce) package refrigerated cheese tortellini
- 3 cups fresh spinach, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Directions:
- In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and cook for an additional 1 minute.
- Add the Italian sausage to the skillet and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat.
- Transfer the sausage mixture to a slow cooker. Add the chicken broth, diced tomatoes, tomato sauce, oregano, basil, thyme, crushed red pepper flakes (if using), salt, and black pepper. Stir to combine.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Thirty minutes before serving, add the cheese tortellini and spinach to the slow cooker. Cover and cook on high for 30 minutes, or until the tortellini are tender.
- Stir in the heavy cream and Parmesan cheese until combined and heated through. Serve hot.
