Comforting Creamy Tortellini Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound Italian sausage, casings removed
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 3 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Directions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and cook for an additional 1 minute.
  2. Add the Italian sausage to the skillet and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat.
  3. Transfer the sausage mixture to a slow cooker. Add the chicken broth, diced tomatoes, tomato sauce, oregano, basil, thyme, crushed red pepper flakes (if using), salt, and black pepper. Stir to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Thirty minutes before serving, add the cheese tortellini and spinach to the slow cooker. Cover and cook on high for 30 minutes, or until the tortellini are tender.
  6. Stir in the heavy cream and Parmesan cheese until combined and heated through. Serve hot.
