Layered Taco Lasagna Delight
Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 cup water
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 2 cups shredded mozzarella cheese
- 1 package flour tortillas (10-inch)
- 1 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro (optional)
Directions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet. Stir to combine and let simmer for 5 minutes.
- Add the black beans, corn, and diced tomatoes with green chilies to the skillet. Stir well to combine.
- In a greased 9×13 inch baking dish, spread a layer of the beef mixture. Top with a layer of flour tortillas, followed by a layer of sour cream, cheddar cheese, and mozzarella cheese.
- Repeat the layers until all ingredients are used, ending with a layer of cheese on top.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Let the lasagna cool for 5 minutes before serving. Garnish with chopped green onions and cilantro, if desired.
