Layered Taco Lasagna Delight

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 package flour tortillas (10-inch)
  • 1 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro (optional)

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning mix and water to the skillet. Stir to combine and let simmer for 5 minutes.
  4. Add the black beans, corn, and diced tomatoes with green chilies to the skillet. Stir well to combine.
  5. In a greased 9×13 inch baking dish, spread a layer of the beef mixture. Top with a layer of flour tortillas, followed by a layer of sour cream, cheddar cheese, and mozzarella cheese.
  6. Repeat the layers until all ingredients are used, ending with a layer of cheese on top.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Let the lasagna cool for 5 minutes before serving. Garnish with chopped green onions and cilantro, if desired.
